Thought I’d share this recipe as it was easy and yummy! I’m not one to often follow set recipes but it’s something I’m going to do more this year – less frozen/ready meals and more fish and vegetable dishes using fresh and organic ingredients is my aim.
Gratin of Fish with Cheese, Tomatoes and Herbs
Serves 2/Preparation 15 mins/Cooking time 20-30 mins
Ingredients
50g Gruyere cheese
50g Emmental cheese
2 tsp Dijon mustard
3 tbsp double cream
12 cherry tomatoes, halved
1 tsp fresh tyme, or 1 tbsp torn basil
salt & freshly ground black pepper
200g fish fillets eg plaice or lemon sole, skinned
Method
- Preheat oven to 180c/Gas 4.
- In a bowl mix the grated cheese with the mustard and cream and add a twist of black pepper.
- Season the cherry tomatoes with a little salt and sprinkle with the herbs.
- Spread half the cheese mixture in a pie dish or gratin dish.
- Lay half the fish fillets on top, and then add all the tomatoes and herbs.
- Add the final layer of fish, followed by the final layer of cheese mixture. This dish can be put in the fridge until you are ready to cook it.
- Cook in the oven for 20-30 minutes until golden and bubbly.
Serve with green salad and boiled new potatoes.
The original recipe was for 4 people and only doubled the quantity of fish but I think you need all that lovely cheese for just 2 of you

I’m a huge seafoods lover especially fish. Salmon ofcourse and definitely I’ll give this recipe a try. I just love cooking new recipes. Thanks.
