Tried this recipe last night and will definitely do again – quick, not too many ingredients, absolutely delicious. I served as a main course with salad and garlic ciabatta bread and found it very filling.

Ingredients
- 2 Romano peppers; top cut off & retained, deseeded with a spoon and knife
- 100 grams feta cheese
- 1/2 red onion, finely chopped
- 15 kalamata olives
- 1 small handful of parsley, chopped (I used basil as I hate parsley!)
- 1 tbs. sundried tomato paste
- black pepper
- salt
Method:
- In a bowl, mix the ingredients together, season, then stuff the peppers with the mixture.
- Heat the oven to 180 degrees.
- Place the peppers on a tray, stuff the peppers with the filling, put their tops on, then add a few splashes of olive oil, season with salt and pepper and roast the pepper for 20-30 minutes until skin has browned and softened.
- Serve immediately as a starter.
